Crunchy Tiramisu in a Glass
Tiramisu is a rich treat and known as THE Italian dessert. The origins of this desert are unknown but its name literally means “pick me up”, signifying that the moral of anyone who eats it will soon be lifted. There’s no doubt that the known properties of coffee have something to do with the name.
INGREDIENTS (for two servings)
- 250 g mascarpone cheese
- 1 tbsp icing sugar
- 50 ml 35% cream
- 1 tsp vanilla extract
- Lady finger cookies
- 100 ml cold coffee, sweetened with 2 tsp sugar
Whip mascarpone cheese and sugar in a bowl.
Slowly pour in cream while continuing to whip until mixture thickens.
Add vanilla, stir, and set aside.
Pour coffee into a deep dish. Place cookies into dish so that only one side soaks in the coffee. Place one layer of cookies at the bottom of the glasses and cover with cream mixture. Continue alternating cookie/cream layers until glasses are full, ending with cream layer. Sprinkle tops with cocoa.
Keep in fridge until ready to serve.
